In 2022, Trilogy Golf Club closed along with its restaurant, one more casualty of ownership turnover that left the course and its dining room dark. The room itself leans into the site's history rather than away from it, with breeze-block accents and a three-sided fireplace built into a space that once hosted the Skins Game. The kitchen runs Wednesday through Sunday, closed Monday and Tuesday, all year, including August.

"This place is going to be the hangout spot for all La Quinta."

That's board president Mark Reider describing the restaurant's ambition when it opened, and by 2026 it had backed up the claim. Kitchen Ten Eleven won the Golden Fork Award for Best Remodeled Food & Beverage Facility in the Public/Resort category, a global competition that judges entries on design, menu, and their effect on the member and guest experience alike.

The reason this matters more than a single restaurant opening is the funding structure behind it. A resort dining room typically needs four dark months to make financial sense, because its whole model depends on winter margins covering the summer gap. A restaurant paid for by a homeowner vote doesn't carry that same math. It doesn't need snowbird season to break even, so it doesn't have to disappear when the snowbirds leave.

The Old Town Storefronts Keeping the Same Hours

Kitchen Ten Eleven isn't the only one running on this logic. A run of smaller, independently owned spots along Main Street stay open through the summer, because their overhead is built for local traffic instead of tourist volume.

None of these businesses are new discoveries. What's new is that none of them close.

What This Actually Changes

The practical effect is that a resident no longer has to choose between eating well and driving to Palm Desert on a Tuesday night in August. That used to be the trade every summer forced on you. It isn't anymore, not because the town added more restaurants, but because the newest and most talked-about one was never built to depend on the season in the first place.
